When making a beef and bacon burger, we don’t mess around. We’re taking the humble beef burger to the next level with a triple threat of flavors. Succulent beef, smoky bacon, and creamy blue cheese.

Ask any burger lover what makes for an extraordinary burger; quality beef will always be on top. As a chef, I’m absolutely on board with that. I also believe that truly exceptional burgers require careful layering of flavors and textures to take that beefy base from great to excellent.

That’s why I refused to settle for just ordinary ingredients when developing this beef and bacon burger with blue cheese. Don’t get me wrong, the beef still takes center stage here. I’m using a prime blend of juicy, well-marbled chuck. Then I’m forming smash patties because they cook fast and caramelize so well in my trusty cast iron skillet.

Blue cheese can be an acquired taste, funky cheese, as my sons refer to it. However, adding it to seasoned caramelized smash patties and smoky bacon imparts an umami richness second to none!

These three ingredients elevate the simple burger into the upper echelons of flavor. The sweet, salty, smoky flavors combined with the creamy, crunchy textures meld into a glorious umami experience. A symphony of flavor that transforms ordinary into extraordinary with every juicy, beefy, bacon, blue cheese loaded bite.

So gather around, meat lovers. Ditch the frozen patties and ketchup because this might be the best burger recipe ever. And one bite is all it takes to prove it. The triple threat is just getting started, baby!

Beef And Bacon Burger Ingredients Deep Dive

While the ingenious melding of flavors may be the show’s star, my indulgent beef and bacon burger with blue cheese and the supporting ingredients deserve their fair share of credit. This burger is so much more than just beef on a bun.

The Ingredients

  • 640g (1.41lb) Ground beef (80/20 beef to fat).
  • 8 rashes of Bacon free-range.
  • 200g (7.05oz) Blue cheese (triple cream).
  • 2 Tomatoes (beefsteak, or heirloom varieties).
  • 2 Avocados.
  • 4 Brioche burger buns.
  • Mayonnaise.
  • Classic yellow mustard.
  • Sea salt and freshly ground black pepper.
  • Rice bran or sunflower oil.
Beef and Bacon Burger Ingredients
  • Ground Beef — The hearty foundation of this burger provides the meaty bulk and that satisfying beefy flavor I crave in a great burger. I’m using an 80/20 blend of ground chuck and brisket. I’m on good terms with my local butcher, who gladly minces this custom mix. The brisket insures there is plenty of juicy fat marbled throughout the burger patties.

Chefs Pro Tip — Too little fat, and you end up with a dense, dried-out hockey puck of a burger. The proper fat ratio keeps the burger tender and moist. Ground chuck also gives you that nice beefy flavor.

  • Free-Range Bacon — While the beef gives this burger its meaty backbone, smoky free-range bacon takes it to the next level of flavor. Each salty, crispy bite provides the perfect contrast to the savory beef. Where possible source free-range belly/streaky bacon for maximum flavor.
  • Blue Cheese — Triple cream decadence pulls everything together in perfect umami harmony. Its creamy texture and funky flavor mellows out and blends sublimely with the beef and bacon. I’m using a local blue cheese Kikorangi (which means blue in Māori) triple cream brie made by Kapiti Cheeses.
  • Beefsteak Tomato — Juicy bursts of summer sweetness. A thick slice of fresh beefsteak tomato adds just the right amount of juiciness to keep things fresh. I love heirloom beefsteak tomatoes for their meaty texture and sweet tomatoey flavor.
  • Creamy Avocado — For even more flavor and texture contrast, I’m incorporating avocado into the beef and bacon burger. The creaminess of fresh Hass avocado. Its lush green color and smooth, creamy texture perfectly balance the richness of the beef, bacon, and blue cheese burger. Hass is by far the best avocado for burgers.
  • Brioche Buns — Holding this masterpiece together requires an equally decadent bun. So, we’re ditching standard sesame seed buns in favor of rich, buttery brioche. With a higher fat and egg content, these buns achieve an ultra-rich, cake-like texture. Taking this burger bun from boring to beautiful.
  • Mayonnaise — For even more flavor and moisture, we’re spreading a healthy slather of creamy mayo onto the toasted buns. Going full-fat with mayo is key here. Low-fat versions seem “healthier,” but they lack the lush texture and balanced flavor only full-fat mayo provides.
  • French’s Yellow Mustard — I added a nice zig-zag of yellow mustard. Its tangy spice and bright yellow color perfectly cut through the decadence with just the right punch of flavor. This versatile condiment is equally at home on these gourmet burgers.

Cooking The Smashed Patties And Bacon

  1. Shape ground beef into 80-100g (2.82-3.53oz) balls. Heat a cast iron skillet, add rice bran or sunflower oil, and place a beef ball in the pan. Let it sizzle and caramelize for 1 minute. Cover the beef with baking paper, use a burger press to flatten into a smashed patty, and cook for 2 minutes. Flip and cook for another 2 minutes. Keep warm in the oven and repeat until all patties are cooked.
  2. Next, cook the bacon in the same skillet, doing so in batches. Avoid overcrowding the skillet to ensure a proper sear on the belly/streaky bacon. You want to achieve a desirable slight crispiness.
